VINIFICATION:
cold maceration for 24-36 hours, fermentation at 18°C in barriques used for at least 10 years, “champenoise method” at 15°C.
AGEING:
24 months on its own yeast in the bottle.
YIELD PER HECTARE:
60 hl/ha
ORGANALEPTIC CHARACTERISTICS:
rosy colour, fine and lasting taste, with a bouquet of Nebbiolo grapes, raspberries, violets, bread crust and yeast, very dry (sugar 5g/l), sweet tannin, well-balanced with a long after taste.
Perfect as an aperitif, goes well with all plates except sweets.
