VINIFICATION:
fermentation at 18°C in barriques of french oak used for at least 10 years, “champenoise method” at 15°C.
AGEING:
30/36 months on its own yeast in the bottle.
YIELD PER HECTARE:
60 hl/ha
ORGANALEPTIC CHARACTERISTICS:
straw yellow colour, fine and lasting taste with an intense bouquet of bread crust and yeast, very dry (sugar 5g/l), full and well-balanced with a long after taste.
Perfect as an aperitif, goes particularly well with crustacea and oysters and with all plates except sweets.
